------ Noriack's Ginger Spice Cookies ----
It's that time of year on Nexus when the weather starts to cool and much of Nexus starts to feel like Whitevale! It's during those times it's good to turn to warm spices and flavors that warm up the tastebuds as well as one's insides. One of my favorite cookies of the season, adapted without the use of Bezgelorian spices, is a Ginger Spice Cookie. A cookie passed down from an Aunt who passed through one time that has always stuck with me. With the uses of ginger and molasses it's sure to wake up the taste buds and still give a sweet finish whether you're Cassian, Lopp, or Chua... Mechari depends on particular software and hardware currently installed.
------------------------------------------------------------
1 cup light brown sugar
1/2 cup butter ( One stick, softened)
1/4 cup shortening (Or Girrok Lard works nice if you can get it!)
Cream the above ingredients until smooth. The mixture should be a light brown texture. Then scrape the bowl down once or twice during the mixing.
1 egg
4 TBSP Molasses (About a 1/4 cup)
Slowly mix in Molasses and the egg. Use a little cooking spray in your measuring cup to help the molasses to be more pourable and not get all messy inside the cup.
2 cups all-purpose flour
1/2 tsp salt
2 tsp baking soda
1/4 tsp ground cloves
3/4 tsp ground ginger
3/4 tsp ground cinnamon
Combine the above ingredients and sift together. Slowly mix the ingredients into the previous mixture until all the flour is moist and incorporated. The dough should be fairly soft and not very sticky ( I could handle it easy in my hardlight gloves without needing to use extra flour.)
1 cup of coarse (Or Turbinado) sugar.
Roll the dough into small balls and then roll the balls in sugar (I used Turbinado sugar because it is nice and course.). Place the dough balls on a baking sheet lined with parchment paper and bake at 350 degrees for 10 minutes or until cookies are spread, lightly browned, and cracking along the top.
Let cookies cool several minutes on the cookie sheets and then transfer to cooling racks to finish. Enjoy!
Good for any season but a regular holiday season sweet here!
